Pre-searing is the tutorial area of Prophecies. Everything is nice and idyllic, very pastoral. The monsters are generally low level and you'll get quests to level up and give you skills as you decide on a second profession. Make use of this area, do your primary and secondary profession skills quests and level up to 5 or 6 (shouldn't take very long).

When you're ready to get on to the real game, decide and commit to a secondary profession. Then, talk to Sir Tydus in Ascalon City. He'll give you a quest that takes you out of the academy and into the real game. After a short quest, you're transported to 2 years later....

Without spoiling what happens, something called the Searing happens (thus, pre-searing/before and post-searing/after). Ascalon is a much different and more dangerous place and the real game starts.

Default Spoiler Alert!

In Prophecies, you start in an area know as pre-searing. Everything is green and pretty. Once you do the academy mission, the cutscene tells you about the catastrophy know as "the searing". You than end up in post-searing and Ascalon looks all desolate and burned out. Once in post you cannot get back to pre with that character. In chapters 2 and 3 there is no pre-searing, just starter islands which you can return to. Think of pre-searing and the starter islands as tutorials.
